I've read through the Royal Mail stamp swap out and have gone through the Q&A but I am feeling really dense today...
Just to be 100% sure, we are only required to swap out non-barcoded stamps that has the Queen's profile and therefore, the Christmas bonus stamps that we are sent every year will continue to be valid after 31/01/23 right?

the date is extended, though I have noticed this week RM are franking mail with the 31st.
Regular stamps without a barcode* will no longer be valid after 31 July 2023. This follows the introduction of a 6 month grace period from the initial 31 January deadline. You can either use up your non-barcoded stamps before this new deadline or swap them for the new barcoded ones.

I don't mind sending them for a swap out but I am worried about the horror stories of people not getting the correct amount back etc. I have over 300+ to send!

So does this mean the stamps we get are 'Christmas stamps' and also that we should be able to use this indefinitely as above (or until they decide to faze these out as well)?How long do I have to use up any non-barcoded stamps I have?
Non-barcoded stamps can be used as postage up until 31 July 2023. If you are able to use them within this time — that's great. If you aren't going to be able to use them up — that's fine too — you can send them in to us and we'll swap them out for barcoded stamps. Our 'Swap Out' scheme opened on 31 March 2022 and you can pick up a 'Swap Out' form from your local Post Office; your Delivery Office's Customer Service Point; print one off our website; or contact Customer Experience and we'll post one out to you.
Note: you don’t need to swap out non-barcoded Christmas stamps – we are still adding a barcode to Christmas stamps, but non-barcoded Christmas stamps will remain valid so can continue to be used after 31 July 2023 and therefore there is no requirement to swap them out.
