I only work a Sunday (6hr contract), started Nov 21 and used 6 hrs annual leave since.
Iv over 30hrs accumulated but I can never get approved for a day off?
What’s the next steps to take?

Tell whoever handles your annual leave you are no longer willing to roll over your annual leave. If they say all leave slots are full, ask for it in writing so you can start the process of an employment tribunal through ACAS (this usually provokes them to sort it).
The employer can tell you when to take your leave, what they can’t do is deny you it, and carrying it over at the end of the holiday year is purely if you and the employer agree to do so.

f**k me I know managers aren't that good at organising things but how s**t can yours be it's only 6hrs in a whole week

If you aren't purchasing annual leave, for under five years service, my understanding is you are entitled to 4.5 weeks holiday (27 hours) plus one-fifth of the annual bank holiday allocation (usually 8 days per year, so 1.6 days {9.6 hours} for you pro rata) per year... So typically 36.6 hours per year.
