I've seen a few people mention Summer/Winter leave, we have never done it like that, you book your leave whenever you like

That could be the reason if those weeks are already taken, or maybe try asking the person who deals with the leave.

Put some money away every week and go on the sick for a week during the blacked out weeks just in case your manager doesn't pay you, although he probably will.

Ours is done a little differently, smaller office and would have had a sheet with all the weeks of the year listed with 3 spaces for names to go in. Take it in turn and move down each year. Now those 3 spaces have become 2 for the whole year (except December) due to staff shortages caused by not replacing staff that have left. The purchasing of extra leave has also been denied.

It would suggest your colleagues have been given there holiday forms before you & those dates filled.
If that is the case then your first question should be “why am I being treated differently from others”
Record there answer, then put in a complaint, in writing saying as much.
Await answer(3 days) & act upon it.

Guy said he has to go 8 months without having a week off thats far to long so if he can't get a week in that time the logical choice would be to have a sickie..not the end of the world having a sickie sean me old chum🙃

How is advising somebody to go sick a logical choice.especially when you have no idea what their sick record is like.could be on a stage 1 or even 2 just seems illogical to me but then you know best.
